Chicken and Turkey Sausage Gumbo

1 onion, chopped
1 green pepper chopped
2 celery stalks, chopped
3/4 pound skinless, boneless chicken cut into chunks
3/4 pound sweet or hot Italian style turkey sausages, cut into chunks
1 tablespoon Cajun seasoning
2 cups reduced sodium chicken broth or basic chicken stock
1 (14 1/2) can fire roasted diced tomatoes
3 Tablespoons all-purpose flour
3 Tablespoon cold water
1 ( 10-ounce ) package frozen sliced okra
1 cup frozen corn kernels

1. Combine onion, bell pepper, and celery in crockpot. Place chicken and sausage on top of veggies. Sprinkle with Cajun seasoning. Top with broth and tomatoes with their juice. Cover and cook until meat is fork tender, 4-5 hours on high or 8-10 hrs on low.
2. About 45 min before done, whisk together flour and water in small bowl until smooth. Whisk 1/4 cup of hot gumbo liquid. Stir back into crockpot. Stir in okra and corn. Cook for 45 min.

I missed the fact that it was a crockpot, so I used a stockpot and it cooked much faster. Plus I made my own chicken broth with 1 bouillon cube to 2 cups of water and partially cooking chicken in a pot. I chose the sausage that I did because it looked good. My mom is making it with turkey sausage in casings. I also made rice and served it under the gumbo. This was very very good!
