Day after V day, Hubbie surprised me with ipad2! Did not expect that, and now we are selling my first gen to help pay for it. I got my passport and in record time, I think under two weeks! Maybe because I had one before? Dusty had to order a certified copy of birth certificate and that has finally arrived.. Took longer than my passport! Now he will send off to get his passport for our cruise!! I am getting excited, our cruise is in may and we are going to the Bahamas.
I received some family recipes from relatives in Texas as a wedding gift a couple years ago and recently came across them. I decided to make the taco soup yesterday and it is so easy and very good! Pretty healthy and cheap I think!
Taco soup
2 lbs ground beef
1 lg diced onion
2 (15 1/2) oz cans kidney beans
2 (15 1/2) oz cans pinto beans
1 (15 1/2) oz can whole kernel corn
1 (15 1/2) oz can hominy
2 cans of rotel (diced tomatoes with
green chilies or jalapeƱos)
1 pkg taco seasoning mix
1 pkg hidden valley ranch salad
dressing mix
Toppings may include: corn chips, sour cream, grated cheese, or even cornbread
Instructions: brown beef and onion. Open all cans leave them undrained And pour them into a crockpot or a big pot on stove. Heat on high for 2 hours or on low for 6-8.
-if you are concerned about sodium you could rinse the beans and put back in can and fill with fresh water before pouring into pot.
Weather here has been weird, windy, cold, warm, and the flu is in the air. Teachers are out sick left and right and tonight I myself are not feeling the best. Hope you try the soup, it's good! I am freezing half of it, for an easy dinner down the road. It makes quite a bit!
