Sunday meals

I am currently cooking up a new recipe called "bubble up enchilada bake" I found it on Emily Bites and tweaked it. It was a 9x13 pan but she said it was 6 servings! That is a big serving! Now I usually try to incorporate some veggies, so if that is all you were eating I get it... She said hers was 7 points for six servings. But she used her store brand biscuits.. I just grabbed a biscuit container and probably got a high calorie one. I will check points next time. Because I came out with 9 points for 1/8 of the 9/13 pan. As well as I got the full fat Mexican cheese instead of light or fat free. Obviously I could make this less points. But first time this is how I made it. 1 pound of Jennie-o turkey cooked and seasoned with salt and black pepper. I can enchilada sauce. I can of rotel of your choice. 2 cups of cooked black beans( I used dry that I cooked up yesterday). 1 can of biscuits that I cut up in 6ths. 1 cup of Mexican cheese on top.it looks pretty good, not sure how the biscuits with Mexican goes.. Once it's all baked I will let you know how it is :) I also made angel food pineapple cupcakes and I think it would be better in a pan versus in muffin liners. Plus I used an off brand angel food and I think I didn't beat it enough! Lol tastes good though:)
